criticalCode CHSC 113996Food temperature

Official wording

Observed the following at unsafe conditions: cooked noodles at 60F, cooked chicken at 63F, garlic in oil at 83F, pot stickers at 123F, and egg rolls at 120F. Hot hold potentially hazardous foods at 135F or above. Garlic in oil was discarded as it had been on counter overnight. Keep cold. Noodles, chicken, and pot stickers were moved to refrigeration (they had been out of temperature control for less than 2 hours). Facility may use time as a public health control if keeping egg rolls above 135F will affect quality (logs/procedure required).

Inspector’s notes

Yellow placard (conditional pass) posted. Other minor violations were also found. For more information, contact Marin County Environmental Health Services at (415)473-6907 and ask to see the actual inspection or ask the food facility for the inspection report.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Official wording
