No hot water was available at the customer restrooms and employee back restroom. Electric water heaters in customer restrooms were not operating at time of inspection. Repair sinks to provide hot water at least 100 *F for all handwashing stations.

Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

Carnitas internal temperature readings were measured at 114F, 124F, 130F, and 133F in different parts of the fodo. According to the employee, the carnitas container was placed in the hot holding insert directly from the fridge. [CA] Potentially hazardous foods that are cooked, cooled, and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 165F for 15 seconds. [COS] The employee reheated the carnitas.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
