Observed smoked salmon to be 56F-57F (2 pounds) that was located in the cold holding unit at the cookline area. Smoked salmon was VC&D on site. Observed hardboiled eggs (unshelled) at 63F and stored above the basin of the cold holding unit. Keep and store all potentially hazardous food 41F and below when not active preparation.
