Observed a hot holding unit holding potatoes at 122 F placed at 9 AM. observed cheese at 45 F and sausage at 48 F above the fill lines in a prep top across from the hood. Potentially hazardous foods must be cold held at 41 F or below or 135 F or above. Hot holding unit temp was increased to hold foods at 135 F and potatoes were labeled with a discard time of 1 PM. Cheese and sausage moved to proper cold holding below the fill line.
