Front handwashing sink by dairy machine without any paper towels. Maintain all handwashing stations properly supplied at all times.

Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

Observed the cook placed the raw hamburger patties on the flat griddle and then (about two minutes later) flipped the hamburger patties. The district specialist observed a few hamburger patties; meat juices were bursting from the meat, and then the cook proceeded to scoop the cooked hamburger patties to place them on the buns using the same spatula. [CA] To prevent cross-contamination, ensure to use different utensils for raw hamburger patties and ready-to-eat foods. The person in charge stated that they use timer to indicate when to flip the hamburger patties.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
