Observed a large tub of refried beans in the walk-in cooler at 48 degrees F. The cook confirmed this was cooked the day prior. Food must be cooled from 135 degrees F to 70 degrees F within 2 hours and from 70 degrees F to 41 degrees F within 4 hours after that. Cool foods in thin pans and store in small containers. Refried beans were discarded.
