Observed box or cooked duck being stored by back kitchen door without temperature control at ambient temperatures. Internal temperature measured at 97.5 *F. Operator stated that duck was received 1 hour ago. Duck was moved to walk in refrigerator and maintained in cold holding until ready for prep.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Paper-towels in dispenser were not available at the handwashing facility in the employee service area. [CA] Provide paper-towels in dispenser for employeee proper hand washing and to prevent employees using an unapproved cloth towel or uniform to dry their hands.

Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
