Observed cheese burgers being packaged measuring at 88.9 *F. Operator stated that burgers were removed from oven 10 minutes ago. Operator then transferred burgers to be stored in warming cabinet. All foods shall be reheated to 165 *F and then stored at 135 *F and above for hot holding. Ensure that foods are prepared and packged for hot holding before temperature of food falls below 135 *F. Discontinue using warming/ hot holding cabinet for reheating. Cabinet shall only be used for hot holding.
