Dish machine not dispensing adequate chlorine sanitizer solution upon completing cycle. Dish machine unit was not in active use at time of inspection. Upon further inspection, it was discovered sanitizer container was not connected to dish machine upon time of inspection. Manager connected sanitizer container to machine during inspection. Dish machine observed dispensing 50 ppm chlorine residual at end of visit.

Observed wiping cloths stored inside wiping cloth bucket near hand sink front register. Ensure all in use wiping cloths are stored in buckets with clean water and sanitizer (100 ppm chlorine or 200 ppm quat). Bucket re-made and measured 200 ppm quat.

Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
