Observed meatballs at 65-100F in bain marie on grill. Item was taken out of refrigeration and briefly reheated on grill prior to being placed in hot water bath. Food was not reheated long enough. Reheat to 165F prior to hot holding at 135F. Meatballs were placed back on stove to reheat (item was taken out of refrigeration less than 1 hour prior).
