Employee observed washing utensils at 3-compartment sink but did not complete sanitizing step prior to air-drying. Utensils shall be washed, rinsed and sanitized in an approved manner. Manager notified and utensils were sent to high-temperature dish machine to be cleaned and sanitized during inspection.
