Black beans 117 - 122 degrees F and 11 - 126 degrees F in two hotel pans with ice on the bottom. Place ice around all four sides of the containers to top level of the food. Black beans finished coking at 9:30 a.m.. Submit photo of cooling log for all potentially hazardous foods that go through the cooling process, Other minor violations were also observed.
