Hold potentially hazardous food at/below 41F or at/above 135F. Per staff, the warmer has been observed as slightly under temperature recently. Ensure temperature is turned up high and monitor the unit. Repair/replace as necessary (if replacing, submit specifications of equipment to inspector). This hot food will be discarded at the end of lunch service (within 2 hours or item being reheated). Cold food is stored on top of ice at salad bar. Recommend adding more ice around containers that hold potentially hazardous food. Comply immediately.
