Hot water at 3 compartment sink shall be maintained at 120 *F at all times. Handwash sinks shall provide hot water at 100 - 104*F for at least 15 seconds, no greater than 130 *F. Operator shall wash rinse in 3 comp sink and complete sanitizing step in high temp dishwasher. Repair hot water to provide appropriate temperatures within 7 days.
