Mechanical dishwasher lacks sanitizer. Repair machine immediately to dispense 50 ppm of chlorine at final rinse cycle. Setup temporary sanitizer station at food prep sink (using 100 ppm of chlorine or 200 ppm of quaternary ammonia) after putting dishes through dishwasher. Note that facility lacks a warewashing sink. Repeat violation. Ensure staff use test strips to verify sanitizer levels regularly. Send invoice of dishwasher repair work.
