Observed food handler touch garbage can with hand and then began discarding cake from wood table into the garbage. All employees shall wash hands with soap and water after contaminating them before touching food equipment and preparing or handling food. Employee instructed by person in charge to wash their hands.

Observed ham croissant in proofer at 62 degrees F. Croissants placed in proofer around 2:00 p.m.. Croissants are kept in proofer until 2:00 - 3:00 a.m.. Discontinue this practice. Ham croissants placed in walk-in refrigerator. Submit written procedure of how croissants or other baked goods with potentially hazardous foods in them are prepared, cooked, cooled, and maintained at 41 degrees F or colder. 2 bacon, asparagus, egg, and cheese croissants voluntarily discarded into the compost container.
