Hot holding units at deli had the following: chicken 119°F, shrimp 117°F, ribs 123°F, chicken burrito 105°F, breakfast sandwiches 130°F. Steam table had cooked carrots at 97°F. All foods were prepared at around 10:00AM. / Rapidly reheat foods to 165°F to hot hold food at 135°F or above.
