Milk in container at coffee area measured at 49F. Per PIC, milk just took out 1 hour ago. Rack of food located outside of walk-in fridge included rice 57F, cooked pork 56F. Per PIC, employee took the rack out for an hour and had lunch. Food item in walk-in fridge measured between 43F-45F. Fridge door was not fully closed. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Milk utilized TPHC with time label. Milk will discard 3 hours later. Rack of food is placed back to fridge for cooling. Food shall be placed in fridge to maintain cold temperature until employee is ready to prepare food. Walk-in fridge door is fully closed for 15 minutes. Temperature lower to 41F. PIC will educate employee to ensure fridge door is fully closed.
