Equipment, utensils: Approved, in good repair, adequate capacity

Inspector’s notes

The cookies are in a plastic self-serve box like display in the middle of the bakery floor. There is about a 4 inch opening on the top where the door does not meet the box. The opening allows for possible insect, etc contamination. [CA] The open cookies must be in a fully enclosed display.

In plain English

Equipment, utensils, thermometers, cutting boards, or single-use items were not in good condition, not the right type, or not stored properly.

minorCode K45Cleaning and sanitizing

Official wording

Floor, walls, ceilings: built,maintained, clean

Inspector’s notes

The floors are missing grout and have accumulated debris between the tiles. [CA] The floors must be kept clean and the grout replaced to eliminate the accumulation.

In plain English

Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

minorCode K21Water, plumbing, and sewage

Official wording

Hot and cold water available

Inspector’s notes

The water took about 3 minutes to get to 100 degrees F at the hand sink. [CA] Adjust so that it can give hot water for proper jand washing.
