Inspector’s notes

Per discussion with the PIC, they are setting food out in the topless cold station to use/discard within 4 hours, unit filled with ice. There was no written procedures prior to utilizing the process. A time as a public health control form will be sent along with the report. Print and fill out the form. Train staff on time as a public health control to maintain and track the process during business hours.
