Observed frozen foods in the prep cooler containing no "pulled" date. Develop a date marking system to include date marking frozen products on the date they are pulled to be thawed. This system must include the discard date as 6 days from the pulled date (day 1 of 7 was the day the product was originally made and frozen).

The fryer side prep cooler is holding foods above 41F. Examples include eggs at 47F and tomato at 48F. This is a new cooler since the last inspection. Chef stated they would trouble shoot and discard TCS foods above 41F.

Discussed stock and time and instructed discard within the hour. Observed foods held on ice in the prep cooler that is not functioning properly by the fryer. Prep cooler was sparsely stocked. Discussed stock time and discard time. Observed half & half in insulated containers. All of the above observations should be held under mechanical refrigeration or by using time as public health control Discussed time as a control policy requirements and supplied template with report.

Instructed discard of beets and discussed HACCP requirements. Chef stated they will only make the beets in smaller quantities and then use or discard in 7 days.

Due to the consistency of foods found to be 56F it appears that cooler had been out of temperature range for a while. Instructed chef to discard all TCS foods in this cooler.
