3-401.11; Priority; Two batches of raw 10:1 patties were placed on the grill and; when taken off and placed in amber bin for service; had a temperature between 139F-157F. Raw comminuted meat shall be cooked to heat all parts of the food to 155F for 17 seconds. CDI- Food was voluntarily discarded. Extend the cooking time of the beef patties or adjust the calibration of the grill. Next batch of raw 10:1 patties reached at least 155F and batch of 4:1 patties reached above 177F.
