3-302.11(A)(2)(b); Priority; A closed container of portioned raw chicken is stored on top of a closed container of raw pork. Except when combined as ingredients; separating types of raw animal FOODS from each other such as beef; FISH; lamb; pork; and POULTRY during storage; preparation; holding; and display by arranging each type of FOOD in EQUIPMENT so that cross contamination of one type with another is prevented. CDI- Raw meats were rearranged by final cook temperature.

3-501.16 (A)(2); Priority; Chopped romaine (43-44F) and pate (46F) in the top section and shrimp; steak; pork; and bbq (46F) in the bottom of the prep cooler temped above 41F. Except during preparation; cooking; or cooling; or when TPHC is used TCS FOOD shall be maintained at 41F or less. CDI- Foods were moved to another cooler since PIC does not know how to turn down the thermostat and all other foods tested at 46F and below. Foods were out of temp less than 2 hours.
