3-501.16 (A) (2) and (B); Priority; Cooked onions on prep table on the makeline found in a container of water (ice had melted) at 61F. PIC stated that cooked onions are maintained in a ice bath and ice is replenished every two hours. Maintain TCS foods in cold holding at 41F or less. CDI- Onions were voluntarily discarded and new onions were cooked. *Discussed another option with PIC to keep grilled onions hot in the steam table at +135F.
