PIC stated that when temperature was checked this morning; makeline unit was holding below 40F. (2)Reach-in cooler holding an ambient air temperature of 48F; all salads were prepped yesterday and holding between 48F-50F. TCS food shall be maintained at 41F or less. CDI- Second makeline unit holding proper temperature and foods were transferred to this unit during the inspection; TCS foods were recently stocked in makeline unit and allowed to rapidly cool. Do not leave foods out at room temperature for extended periods of time during the restocking process. Facility agrees to use the backup unit for prep until the unit at drive thru can be repaired. All salads in reach-in cooler were voluntarily discarded and unit will not be used until it is repaired and holding proper temperature. Salads will be held in the walk-in cooler after preparation. *Refrigeration technician visited for repairs during the inspection.
